Stuffed Green Cabbage Leaves With Pork & Apple Stuffing


A great dish for getting creative with cabbage.

Serves 4

INGREDIENTS

  • 4 nice green cabbage leaves

  • 2 green apples

  • 2 shallots

  • 1 tbsp butter

  • 150g fresh breadcrumbs

  • 250g pork mince

  • 500ml vegetable or chicken stock

PREPARATION & COOKING

  1. Blanche 4 nice green cabbage leaves in salted water for 2 minutes. Allow to cool and put aside

  2. Dice 2 apples and 2 large shallots and place in a frying pan. Cook slowly till it become sticky.

  3. Add 1 tbsp of butter and add 150g of fresh breadcrumbs and stir till it form a paste.

  4. Add this paste to 250g of freshly minced pork and season to taste.

  5. Wrap the stuffing in the cabbage leaves and place in a saucepan with 500ml of vegetable or chicken stock. Simmer for a few minutes, then cover and cook in a preheated oven at 180 deg.C for 10 minutes.

  6. Strain from the stock and serve.
