Speedy Potato Gratin With Wild Garlic Pesto


A super tasty and simple to make dish. A perfect accompaniment for roast lamb, beed, chicken or fish.

Serves 2

INGREDIENTS

  • 4 medium potatoes, peeled

  • 3 tbsp Le Skinny Chef Wild Garlic Pesto

  • 3 tbsp light cream

  • salt and pepper

PREPARATION & COOKING

  1. Slice the potatoes into about 3mm thick slices.

  2. In a mixing bowl, mix the wild garlic pesto and light cream and season to taste with salt and pepper.

  3. Add the sliced potatoes and mix well.

  4. Please into a shallow ovenproof dish and bake in a 190 deg C preheated oven for 25-30 mins or until tender.

  5. Serve and enjoy.
